Oat Banana Bread
- 6 very ripe bananas, mashed
- 1/2 cup packed brown sugar
- 4 large eggs
- 2 tsp vanilla extract vanilla bean paste
- 2 cups milk of choice
- 4 cups old-fashioned rolled oats
- 1/2 cup ground flaxseed
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- Chocolate chips
- Preheat oven to 375F. Grease a 9x13 baking dish with nonstick spray and set aside.
- In a large bowl, stir together the mashed bananas, brown sugar, eggs, vanilla, and milk until combined.
- Fold in the oats, flaxseed, baking powder, cinnamon and salt until completely combined, then fold in the chocolate chips.
- Pour oat mixture into prepared baking dish and top with a couple more chocolate chips if you feel called to do so.
- Bake for 40-45 minutes, or until edges are golden-brown and a knife inserted in the center comes out mostly clean.
- Allow to cool for 10ish minutes until slicing and serving. Store covered in the fridge for up to 3 days, or freeze individual slices for up to 1 month.
