Oat Banana Bread

  1. Preheat oven to 375F. Grease a 9x13 baking dish with nonstick spray and set aside.
  2. In a large bowl, stir together the mashed bananas, brown sugar, eggs, vanilla, and milk until combined.
  3. Fold in the oats, flaxseed, baking powder, cinnamon and salt until completely combined, then fold in the chocolate chips.
  4. Pour oat mixture into prepared baking dish and top with a couple more chocolate chips if you feel called to do so.
  5. Bake for 40-45 minutes, or until edges are golden-brown and a knife inserted in the center comes out mostly clean.
  6. Allow to cool for 10ish minutes until slicing and serving. Store covered in the fridge for up to 3 days, or freeze individual slices for up to 1 month.
